  • 1 cup brown sugar, packed
  • 4 large eggs
  • 1 cup vegetable oil
  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat the sugars and eggs until light and fluffy, then mix in the oil.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Fold in the grated carrots and pineapple.
  6. Pour the batter into the prepared loaf pan and bake for 60-70 minutes.
  7. Allow to cool before removing from the pan.
