Carrot Cake Energy Balls

Delicious and healthy carrot cake energy balls, perfect for a quick snack.

Ingredients

  • 1 cup oats
  • 1 cup shredded carrots
  • 1/2 cup nut butter
  • 1/3 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup chopped walnuts

Instructions

  1. In a large bowl, combine oats, shredded carrots, nut butter, honey or maple syrup, vanilla extract, cinnamon, and salt.
  2. Mix until well combined.
  3. Add in chopped walnuts and fold them into the mixture.
  4. Using your hands, form small balls and place them on a baking sheet lined with parchment paper.
  5. Chill in the fridge for at least 30 minutes before serving.

  • These energy balls can be stored in an airtight container in the fridge for up to one week.
