- 1 cup oats
- 1 cup shredded carrots
- 1/2 cup nut butter
- 1/3 cup honey or maple syrup
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/4 cup chopped walnuts
- In a large bowl, combine oats, shredded carrots, nut butter, honey or maple syrup, vanilla extract, cinnamon, and salt.
- Mix until well combined.
- Add in chopped walnuts and fold them into the mixture.
- Using your hands, form small balls and place them on a baking sheet lined with parchment paper.
- Chill in the fridge for at least 30 minutes before serving.
