Caramel Apple Cheesecake Bars

  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups diced apples
  • ½ cup caramel sauce

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of the prepared baking dish.
  3. In a large bowl, beat cream cheese and brown sugar until smooth. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. Pour the cream cheese mixture over the crust in the baking dish, spreading evenly.
  5. Scatter the diced apples over the cream cheese layer, then drizzle caramel sauce on top.
  6. Bake for 30-35 minutes or until set. Let cool before slicing into bars.
