Caramel Apple Cheesecake Bars

  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 4 packs (8 oz each) cream cheese, softened
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 3 cups diced apples
  • 1 cup caramel sauce
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a greased baking pan.
  3. In another bowl, beat the cream cheese until smooth. Gradually add brown sugar and vanilla, mixing well.
  4. Add eggs one at a time, mixing until incorporated.
  5. Fold in the diced apples and cinnamon.
  6. Pour the cheesecake mixture over the crust and smooth the top.
  7. Drizzle caramel sauce over the top and swirl with a knife.
  8. Bake for 45-50 minutes or until set. Let cool, then refrigerate before cutting into bars.

Notes

  • For a richer flavor, try adding chopped nuts to the crust.
  • Serve with extra caramel drizzled on top.
