  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups ricotta cheese
  • 1 cup cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup mini chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a bowl, mix graham cracker crumbs and melted butter until well combined, then press into the bottom of the prepared pan.
  3. In a large bowl, beat ricotta cheese, cream cheese, sugar, and vanilla until smooth.
  4. Add eggs, one at a time, mixing well after each addition.
  5. Fold in mini chocolate chips.
  6. Pour the cheesecake mixture over the crust and spread evenly.
  7. Bake for 30-35 minutes, or until the center is set and edges are lightly golden.
  8. Let cool before slicing into bars.
