  • 4 large flour tortillas
  • 6 slices turkey bacon
  • 1 cup cooked chicken ham, diced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 large eggs
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a skillet, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same skillet, scramble the eggs with salt and black pepper.
  3. Lay a tortilla flat in the skillet. Sprinkle half with cheese, then add turkey bacon, chicken ham, and scrambled eggs.
  4. Fold the tortilla over and cook until golden brown on both sides.
  5. Repeat with remaining tortillas and filling.
  6. Cut into wedges and serve hot.

  • For added flavor, include diced vegetables such as bell peppers or onions.
