Blackberry Velvet Gothic Cake

  • 1 cup unsweetened cocoa powder
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup blackberry puree

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, combine the flour, cocoa powder, sugar, baking soda, baking powder, and salt.
  4. Add the oil, buttermilk, eggs, and vanilla extract. Mix until smooth.
  5. Fold in the blackberry puree.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
