- 1 cup lentils
- 4 slices turkey bacon
- 1 cup diced chicken ham
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups water
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon cumin
- Salt and pepper to taste
- In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and crumble.
- Add onions and garlic to the pot. Sauté until translucent.
- Add the lentils, chicken broth, water, thyme, cumin, and crumbled turkey bacon.
- Bring to a boil, then reduce heat and simmer for about 25 minutes until lentils are tender.
- Stir in the chicken ham and cook for an additional 5 minutes.
- Season with salt and pepper to taste. Serve hot.
