Ingredients

  • 1 cup barley
  • 4 cups beef broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon bay leaf
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  2. Add beef and brown on all sides.
  3. Add carrots, celery, and barley; stir well.
  4. Pour in beef broth, thyme, and bay leaf; bring to a boil.
  5. Reduce heat and let simmer for 1.5 to 2 hours or until beef is tender.
  6. Season with salt and pepper before serving.

Notes

  • For extra flavor, add a splash of Worcestershire sauce.
  • Feel free to substitute with any vegetables you have on hand.
