Banana Oatmeal Bars

Delicious and easy-to-make banana oatmeal bars that are perfect for a quick snack or breakfast.

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1/2 cup almond butter or peanut butter
  • 1/4 cup chocolate chips (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a bowl, mash the ripe bananas until smooth.
  3. Add oats, honey or maple syrup, nut butter, and vanilla extract to the bananas and mix until well combined.
  4. If using, fold in the chocolate chips.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Bake for 20-25 minutes until golden brown.
  7. Let it cool before slicing into bars.

Notes

  • For a nut-free version, substitute almond or peanut butter with sunflower seed butter.
  • These bars can be customized by adding nuts or dried fruit.
