Ingredients

  • 1 cup wild rice
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup chopped kale
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Sauté onion, carrots, and celery in the bacon drippings until softened.
  3. Add garlic and cook for an additional minute.
  4. Stir in the wild rice, vegetable broth, thyme, and rosemary.
  5. Bring to a boil, then reduce heat and simmer for 40 minutes, or until rice is tender.
  6. Add kale and cooked turkey bacon; simmer for an additional 5 minutes.
  7. Season with salt and pepper to taste before serving.

Notes

  • For added creaminess, stir in a splash of cream before serving.
