- 3 pounds chuck roast
- 1 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup rice vinegar
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon sesame oil
- 1 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- Preheat oven to 300°F (150°C).
- In a bowl, mix soy sauce, brown sugar, rice vinegar, garlic, ginger, sesame oil, black pepper, and red pepper flakes.
- Place the chuck roast in a roasting pan and pour the marinade over it.
- Cover the pan with foil and roast for 3-4 hours until tender.
- Remove the foil and increase the temperature to 375°F (190°C) to caramelize the sauce for an additional 30 minutes.
- Let it rest for 10 minutes before slicing.
Notes
- For extra flavor, marinate the chuck roast overnight.
- Serve with steamed rice and vegetables.
