  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 cup apples, peeled and diced
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, combine the flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix the sugars, eggs, melted butter, and vanilla until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until moistened.
  5. Fold in the diced apples gently.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes, or until a toothpick comes out clean.
  8. Let cool before serving.
