  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup apple cider
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each.
  4. Stir in sour cream, apple cider, vanilla extract, cinnamon, and nutmeg until fully combined.
  5. Pour the cheesecake mixture over the crust and smooth the top.
  6. Bake for 55-60 minutes, until the center is set but jiggly.
  7. Turn off the oven and let the cheesecake cool in the oven for 1 hour.
  8. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For a more intense apple flavor, add a layer of apple compote on top before serving.
  • Serve with whipped cream for extra indulgence.
