Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the apple cider and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. In a separate bowl, beat the cream cheese until smooth. Add powdered sugar and apple cider vinegar, mixing until creamy.
  7. Drop spoonfuls of cookie dough onto the prepared baking sheet, then make an indentation in the center of each cookie.
  8. Fill each indentation with the cream cheese mixture.
  9. Bake for 12-15 minutes, or until the edges are lightly golden. Remove from the oven and let cool.
