- 1 pound chicken thighs
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup green peas
- 1 cup carrots, diced
- 2 potatoes, diced
- 1 bell pepper, chopped
- 4 cups chicken broth
- 1 bunch fresh cilantro, chopped
- 1 tablespoon olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, and sauté until translucent.
- Add chicken thighs and cook until browned on all sides.
- Stir in carrots, bell pepper, and potatoes; cook for about 5 minutes.
- Add chicken broth, bring to a boil, then reduce to a simmer.
- Cook for 20-25 minutes until chicken is cooked through.
- Remove chicken, shred, and return to the pot.
- Add peas and cilantro; simmer for an additional 5 minutes.
- Season with cumin, salt, and pepper to taste.
- Serve hot.
