Aguadito De Pollo

Aguadito de Pollo is a traditional Peruvian chicken soup that is hearty, flavorful, and perfect for any occasion.

Ingredients

  • 1 pound chicken thighs
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup green peas
  • 1 cup carrots, diced
  • 2 potatoes, diced
  • 1 bell pepper, chopped
  • 4 cups chicken broth
  • 1 bunch fresh cilantro, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, and sauté until translucent.
  3. Add chicken thighs and cook until browned on all sides.
  4. Stir in carrots, bell pepper, and potatoes; cook for about 5 minutes.
  5. Add chicken broth, bring to a boil, then reduce to a simmer.
  6. Cook for 20-25 minutes until chicken is cooked through.
  7. Remove chicken, shred, and return to the pot.
  8. Add peas and cilantro; simmer for an additional 5 minutes.
  9. Season with cumin, salt, and pepper to taste.
  10. Serve hot.

Notes

  • For a spicier kick, add jalapeño or hot sauce.
  • This soup is great with a squeeze of lime.
